Lacey’s Pantry: Lemon Lover’s Trifle

Ingredients:

  • 1 Lemon Lovers Pound Cake cut into 1-inch cubes
  • 1/2 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 2.7 oz box Dream Whip
  • 3 cup very cold whole milk divided
  • 2 3.4 oz boxes instant lemon pudding mix
  • 16 oz frozen whipped topping OR 4 cups fresh sweetened whipped cream
  • 2 Tbsp grated white chocolate
  • Lemon slices and sprigs of fresh mint for garnishing
  • Directions:
  • In a small saucepan over medium-high heat the granulated sugar and lemon juice together. Stir until the sugar is completely dissolved then set aside to cool.
  • In the bowl of a stand mixer whip together the Dream Whip (the box contains 2 envelopes – use both) and 2 cups of cold whole milk. Whip for 5 minutes or until soft peaks form.

From the time I was little, I loved reading. My favorite books were those centered around animals, whether they were funny, sad, educational, or a little of each. These books open windows into worlds filled with hard work, adventures, and connections to the lifestyle we all love. Here’s a roundup of some great books for children – I’m betting that you’ve read or heard of more than a few!

“Little House on the Prairie” by Laura Ingalls Wilder

A classic in children’s literature, “Little House on the Prairie” chronicles the life of the Ingalls family as they navigate the challenges and rewards of frontier life. The series, based on Wilder’s own experiences, paints a vivid picture of pioneer living, including farming and homesteading. It’s an excellent introduction to the historical aspects of farming and rural life in America.

“Charlotte’s Web” by E.B. White

“Charlotte’s Web” is a beloved tale that highlights the simple yet profound happenings on a farm. Through the friendship between Wilbur, a pig, and Charlotte, a spider, children learn about farm animals, life cycles, and the values of friendship and perseverance. E.B. White’s gentle storytelling and rich characterizations make it a timeless read.
