Cooking with Courtney – Jalapeno Dove Poppers

Jalapeno Dove Peppers-

Deboned dove breasts
Whole jalapenos
1 Block of cream cheese
1 Package of bacon,
thinly sliced
Soy sauce

Once the dove breasts are deboned, marinate them in soy sauce overnight (refrigerated). When ready to prepare, preheat your grill and remove the dove breasts from marinade. Slice jalapenos lengthwise in strips (as large or small as you’d like) and remove all seeds/veins (unless you’re brave…unlike me). Spread cream cheese inside jalapeno and top with dove breast. Wrap with a slice of bacon and secure it with a toothpick. (Tip: Soak wooden toothpicks in water before using on the grill, let’s all work together to prevent food fires.) Grill poppers over medium-high heat for 20-25 minutes or until bacon is crispy, turning once.

“For me, fall means many things: sweaters, soups and a freezer full of dove. Combining my husband’s natural desire to hunt and gather with a beautiful, grilling evening on the patio is a win-win for us all. Here’s one of our favorite dove season recipes. I like to pair the poppers with savory cornbread waffles, I occasionally leave room for the dove. Don’t forget the butter! Enjoy.”
