Cowboy Cuisine – Greer’s Ranch Cafe

Sitting in a corner lot where once sat the Dawson’s Saloon in the early 1900s, is Greer’s Ranch Cafe. You can stare through its patio at the beautiful stone courthouse in Stephenville, Texas.

Walking around the streets surrounding the courthouse and historic Downtown Square brings back simpler times as the shops and buildings look untouched from years gone by.

Greer’s Cafe is beautifully restored with a modern feel but decorated in cowboy pictures. The truly lucky get to sit in the corner booth that sits under the giant painting of James Dean in one of the finest western films ever made, “Giant.”

Owner Phil Greer, who has over 30 years of restaurant experience, has created a menu of very appetizing down home southern cuisine and more: everything from chicken fried, chicken and dumplings, and beef stew to higher end Ribeye and bacon wrapped tenderloin filet. There is a great choice of sides from fried green tomatoes to fried okra and mac and cheese.

My wife Amanda and I started with an appetizer we knew we shouldn’t have, but couldn’t resist. That was the deep fried deviled eggs with a raspberry chipotle dipping sauce. Now I have to tell you there isn’t a cowboy on the plains that loves deviled eggs more than I do, as my Grandmother Camp used to make the best. I would beg her every chance I got to make them. So I have to say that taking a staple like a perfect deviled egg and then frying it is kind of like riding a bucking horse on an ice skating rink: over the top, pretty dangerous, and way too much fun. They were great and I could eat my cowboy boots if that sauce was on them.

Seems lately these days Texas is becoming the envy of musicians from around the world.
With the overwhelming response to “Yellowstone,” the television series, Texas once again finds itself under the microscope of the world, much like the late 1980’s TV series know to all around the globe as “Dallas.”

With that said, the musician population in Texas is beginning to grow as many aspiring performers turn their sights on Texas instead of Nashville. Meet my newly-found friend and fellow musician Grace Partridge. This youthful 19 year old has recently made Texas her new home. She began fiddling at age four in Rigby, Idaho. Grace worked her way through the National Fiddle championships in Weiser, Idaho, becoming a five-time national champion. She’s even played on the Grand Ole Opry. Still yet, her desire to become a true Texas Fiddler has brought her to the Lone Star State. I’m pretty sure we can thank Bob Wills for that.
