Cooking with Courtney – Sunny Day Lemon Cake

Sunny Day Lemon Cake 

Cake:
1 pkg yellow cake mix
4 large eggs
1 can (15 3/4 oz) lemon pie filling
Juice of 1/2 lemon (Optional, if you like lots of lemon flavor)
Icing:
4 oz. cream cheese, softened
1/2 cup butter, softened
2 1/4 cups powdered sugar
1 1/2 teaspoon vanilla extract

Directions:

Preheat oven to 350 degrees. Mix cake mix, eggs, and lemon juice until smooth. Add pie filling and gently combine. Pour equal amounts of mixture in two round cake pans. Bake for 18-21 minutes or until toothpick inserted comes out clean. Allow cakes to cool completely. In separate mixing bowl, beat together cream cheese, butter and sugar until smooth. Add vanilla and stir. Place first cooled cake on platter and spread 1/3 of the icing on top. Place second cooled cake on top and use the rest of the icing for top and sides. Garnish with grated lemon peel to add a little “pretty.” May you enjoy this with many loved ones and a tall glass of ice cold lemonade!
